socca

Socca - first try

This is the product of my first attempt at cooking socca. I got the recipe from www.thekitchn.com. Oh, you may think — it’s slightly burned. Well, it’s my understanding that it’s supposed to look like that! The green things are not green onions; they are garlic scallions. Socca is a French chickpea (garbanzo) flour crepe that is broiled in the oven in a cast iron pan. Except that I don’t have a cast iron pan, so I improvised with a stainless steel pain. That bit that’s gone from the bottom is gone because I couldn’t wait to taste it before photographing it.

The socca was yummy, and certainly turned out much better than my earlier attempt at making garbanzo flour naan.
