Take a good look at this photograph. Those two-tone beans are called “snowcap” from Zürsun Idaho Heirloom Beans, which I bought from the Pasta Shop on 4th Ave. in Berkeley–a new favorite foodie hangout. The snowcaps have a dense, nutty taste, and are combined wonderfully here by Michael (see “good loaf” below) with apples (Gizdich Ranch), canned tomatoes, onions and pork (Grocery Outlet). The sauce is a bit spicy, with a touch of balsamic vinegar and molasses, adobo seasoning (something I would never have thought to combine with beans), and bay leaves. Really scrumptious.
