The Mole Wall

I immediately hit a “wall” in the process of making the mole poblano; thinking that, of all places, the big La Rosa Mercado in Watsonville would surely have all the ingredients, I was disappointed to be able to find only one of the chiles I needed there — and it was one that I already had at home. So the mole challenged fizzled.

I can either attempt a different mole dish, or do more (physical) research, and see if I can find a store that carries more of the ingredients that I need. As I begin my research, I’m realizing that part of the problem is one of terminology and packaging. Stay tuned…
